Easy recipes to use up strawberries
We have had a glut of strawberries recently from our visits to the fruit farm, and oh what a joy it has been! The excess of strawberries lounging in our fridge has forced us to explore a whole variety of recipes that have made for very happy family desserts here. So if you’ve found yourself with an excess, here are 9 ideas on what to do with fresh picked strawberries.
Impressive strawberry recipes that take minutes
Sometimes you just need to get something on the table in minutes. These strawberry desserts will impress, but take no time at all to prepare.

Cheats Strawberry Pavlova
Pavlova is always a favourite for a special summer dessert, but making a meringue is sometimes overkill when you just want a quick dessert for a family dinner. We take a shortcut by whipping up some double cream, dolloping it onto a ready-made meringue nest, and topping with strawberries. Simple!
Strawberry desserts in a glass
Sometimes you want a properly grown up dessert – or a cocktail to accompany it. Here are some quick ideas for strawberry drinks.
Alcohol-Free Strawberry Mojito
Gorgeously refreshing, this strawberry mojito mocktail is fresh and zingy, and simple to make with a few basic ingredients. Serve virgin, or with added rum, over crushed ice, for a quenching drink on a hot day.
Grown up Strawberries and Cream Cocktails
Sarah’s recipe for strawberries and cream cocktails looks gorgeous for adults, but you could easily make a non-alcoholic version by substituting the vodka with elderflower cordial or grape juice.
Simple frozen strawberry recipes
These strawberry desserts work well with fresh strawberries, or if you have a powerful blender, you can use frozen berries, so don’t be afraid to freeze any surplus you’ve picked to use up later. They’re perfect for ice lollies!
Strawberry Colada Ice Lollies
Try this wonderful, creamy, strawberry colada ice-lolly. Simply whizz up the ingredients in a blender, and freeze! And the beauty of these is they can be made for kids, or with added rum for a grown-up barbeque dessert treat.
Strawberry Mojito Sorbet
You could also turn your drink into a sorbet; the same ingredients from the mocktail recipe, with some added icing sugar, and an ice-cream machine (you can use the freezer method if you don’t have a machine) will give you a delicious sorbet dessert.
Strawberry Dessert recipes to impress
Rhubarb and Strawberry Eton Mess
If you fancy changing things up a little, adding rhubarb to your strawberry dessert recipe makes for a delicious combination that’s just a little bit different. This recipe for Rhubarb and Strawberry Eton Mess is guaranteed to be a crowd pleaser.
Strawberry and Vanilla Cream Cake
If it’s cake you’re looking for, you can’t go wrong with this strawberry and vanilla cream cake by Emily at A Mummy Too. A fresh strawberry take on the classic victoria sponge, Emily says it’s so easy a preschooler could make it!
Stunning Strawberry Gateau
Or if you want a cake that’s a bit more out there – but still equally as easy – try this Strawberry and Elderflower Eton Mess cake from Jenny Paulin. I know my kids would LOVE decorating this one!
Strawberry and Lemon Cheesecake Sundae
If you need a fast and impressive dessert, I love the look of this Strawberry and Lemon Cheesecake Sundae from The Crazy Kitchen. A pudding that tastes just like a cheesecake, but is ready in half the time, and appeals to the kids is a definite winner in my book, and it wouldn’t even matter if the strawberries were on the turn for this one.
What have I missed? Any quick and easy strawberry recipes you can share with me? I have lots left!
PIN FOR LATER:
If you’re not already a fan of strawberries, you should be. Not only are they juicy, summery and delicious, they’re a bona fide superfood, too. I usually make many kinds of cake, juice,… and something like that with them, particularly chocolate covered strawberries. It doesn’t take my time, is so easy to make, and really appetizing to enjoy. Just need to turn the strawberries upside down and insert by the toothpicks into a piece of styrofoam for easy cooling, or simply place them on a sheet of wax paper. White chocolate may be drizzled over the milk chocolate for a fancier look. It’s perfect for a weekend party!
Oh what a good idea about the styrofoam – I love chocolate dipped strawberries!
