Roasted Mediterranean Vegetable Pasta: 6 WeightWatchers Points

This is Mummy’s staple “been a bad week” recipe – dead simple, really tasty, and you can spice it up or down according to taste. Since the only points values are in the pasta, you can make it as low or high as you need, depending on what you have left. Mummy always makes extra; she claims the roasted vegetables are surprisingly delicious in a wrap for lunch the next day (3 points for lunch if you use Sainsbury’s Be Good to Yourself wraps). For my tastes, aubergines can go swing, not my cup of tea at all, but give me a beetroot (cake) and I’m happy!

Roasted Mediterranean Vegetable Pasta

You will need:

1-2 aubergines, chopped into cubes
1 red onion, cut into wedges
3 peppers, of differing colours, sliced
2 courgettes, chopped into chunks
3 tsps Rose harissa paste
Low calorie cooking spray

Preheat the oven to 180ºC

Spray 1 or 2 roasting tins with the cooking spray. (Don’t overcrowd the tins, as this prevents the veg from crisping). Toss all the vegetables in the tins, sprinkle with salt and spray again with cooking spray.Roast in the oven for around 40 minutes, tossing frequently,until soft, with crisp edges. When ready, toss in the harissa paste.

Cook your desired amount of pasta (1 propoint for 10g), mix with the vegetables and serve immediately!

  1. I would say this looks yummy but AUBERGINES ARE THE DEVIL and are not to be trusted under ANY circumstances.

    But *ahem* lovely colours 😉

    • Ah, in the special selection aisle. It’s right next to things like tapenade and porcini mushrooms. It’s a spicy paste (morrocan I think) that gets used in things like houmous
