Slow Cooker Sausage and Lentil Casserole

A hearty and healthy casserole, that takes minutes to assemble and will cook happily all day ready for dinner when you get home.

Ingredients
  

  • 8 pork sausages
  • 4 carrots peeled and chopped
  • 1 250 g pack ready to eat Puy lentils
  • 2 OXO Herbs and More rosemary and thyme flavour pots

Equipment

  • Slow cooker or casserole dish

Method
 

  1. Fry the sausages in a little oil until browned.
  2. Add to a slow cooker or casserole dish, with the carrots and lentils.
  3. Whisk the contents of the flavour pots into 400ml boiling water, and pour into the casserole.
  4. Cook in a slow cooker for 5-8 hours on medium heat, or in the oven for 2 hours, covered, at 130 deg C.
  5. Serve with mash.
