Authentic chilled Gazpacho
Chilled, garlicky and so refreshing, this cold soup is delicious on a hot day

- 1 kg ripe plum tomatoes
- half small onion
- 1 small green pepper
- half cucumber
- 250 ml olive oil
- 2 dessert spoons sherry vinegar
- 200 g day old bread soaked in water
- 1 clove garlic crushed
- 1 small handful each diced tomateos, red and green peppers, cucumber, onion and croutons to sprinkle on top
- salt and pepper to taste
Roughly chop the tomatoes and put into a blender with the chopped onion, pepper, cucumber, vinegar, oil, garlic and bread. Blen until smooth.
Pour into a bowl, season, and leave to chill for at least an hour. Serve in soup bowls with the toppings sprinkled in.
